Moon Bakes: Quick and easy banana muffin recipe

This easy-to-make banana muffin recipe is a guaranteed crowd-pleaser and only takes around 35-40 minutes from start to finish. And did we mention they’re absolutely delicious? 

 

Remember when banana bread was all the rage in 2020? Well now there’s a new bake in town in the shape of these scrumptious banana muffins. Not only are they Inastagram worthy and a totally moreish way of using up overripe bananas, they’re quick and easy to make, so you can get the kids involved, too.

Banana muffins are a great breakfast on-the-go, or snack in-between meals, and if you don’t eat the whole batch just pop them in the freezer for later.

For those with an extra-sweet tooth, try adding a handful of chocolate chips or cacao nibs to the mixture.

 

 

MAKES 10-12 MUFFINS

 

Ingredients

– 2 cups Self Raising flour
– 2 ripe bananas mashed (plus extra slices for decoration – optional)
– 1 egg
– 3/4 cup brown sugar
– 1/2 tsp baking soda
– 1 tsp vanilla essence
– 1 cup milk
– 2 tbsp melted butter
– Handful of chocolate or cacao nibs (optional for extra gooeyness!)

Method

1. Preheat the oven to 180 C / Gas 4. Place 12 paper baking cases in a muffin tin
2.
Sift the flour and baking soda together and set aside
3. Combine the mashed bananas, sugar, egg, melted butter and milk in a large bowl and mix well
4. Fold in flour mixture, and mix until smooth
5. Fill the baking cases with the mixture – about ½ to ⅔ full (top with slices of banana if you wish)
6. Bake in preheated oven for 20-25 minutes or until a skewer comes out clean
