Smoothie Sundays: Pineapple and mango smoothie bowl

This pineapple and mango smoothie bowl is packed with vitamins and antioxidants making it a super-healthy option for breakfast or brunch – just don’t forget to photograph it first!

This week’s smoothie bowl is refreshingly tropical, but of course the main attraction of these breakfast delights is the artistic picture you paint with your toppings, which can be anything you have to hand, from chia seeds to nuts and berries. Pomegranate seeds or passion-fruit pulp would make a very Insta-worthy colour contrast as well.

So you’re aiming for the taste explosion of a smoothie, but the consistency of whipped, soft ice cream that will hold up those all-important toppings. Children love these bowls, and they have the advantage of being nutrient dense.

Both pineapples and mango are low in calories but high in minerals and vitamins such as vitamin C. Bananas are high in potassium, and their density will help the thickness of the smoothie, particularly if they are frozen in peeled chunks first.

Serves 2

– 225g pineapple cut into chunks. Use fresh or frozen
– 1 mango, chunked
– 2 bananas, frozen if possible and cut into chunks (they will help make the smoothie thicker if frozen)
– 2 tbsp Greek yogurt – or as much as needed for the desired consistency

To taste. Try fresh pineapple, toasted pistachios, chia seeds and fresh berries.

Put the pineapple, mango, bananas and yogurt into a blender and pulse until thick. Add yogurt a little at a time – you don’t want the mix to become too liquid and different fruits will release different amounts of juice. Pour into two bowls and decorate with whatever fruits you have to hand, but make it look inviting. A sprig of mint leaves in the design will help the fresh look. The mixture will keep in the fridge for 1 day but don’t add the toppings until just before serving.
