Smoothie Sundays: Secret porridge smoothie recipe

High in fiber and packed full of nutrients, this secret porridge smoothie recipe is your perfect breakfast-in-a-glass, and might just be the easiest way to get your kids to eat their oats!

 

It’s breakfast time, the children are cranky and the school run needs to be more of an Olympic sprint if everyone is going to get where they need to be. Porridge is more of a cold-climate institution, but this nutritious chilled oat smoothie is so flavoursome, that children might think they’re having an early morning fast-food-chain shake as a special treat. It’s oats, peanut butter, banana and pineapple – what’s not to like?

As for nutrition, oats contain protein and are high in fiber – they also fill you up quickly and you’re likely to want fewer snacks in consequence. The remaining ingredients are full of vitamins and minerals, giving you a good dose of potassium, magnesium, vitamins C, B12 and B6, together with calcium and protein.

Serves 1 large or 2 small portions

Ingredients

– ¾ cup rolled oats – not the instant kind
– 1 tbsp peanut butter
– ½ cup thick yogurt
– ½ cup milk
– 1-2 ripe bananas
– 1 cup frozen pineapple
– ¼ tsp vanilla extract
– ½  tsp cinnamon
– Pinch of salt
– 6-8 ice cubes
– Tsp honey to taste, if desired

 

Method

Break the banana into chunks and add them to a blender, followed by all the other ingredients. Blitz until smooth, adding more liquid if required. If too thin, add a further couple of tbsp of oats.
