Smoothie Sundays: Apple crumble smoothie bowl

This delicious apple crumble smoothie bowl is a nod to the classic British dessert, made with unsweetened apple sauce and minus the high calorie content

 

This week’s smoothie bowl is a nod to a British classic dessert – apple crumble. A crumble topping has flour and butter rubbed together with oats and sugar to create a knobbly topping of gorgeousness over stewed apple flavoured with cinnamon. This smoothie bowl is a much cooler version – in every sense – and packs a healthier nutritional punch. This recipe uses apple purée but unsweetened apple sauce from a jar would do just as well.

As always with a smoothie bowl, one of the main attractions is the design on the top with anything you have to hand, from shredded coconut to nuts and berries. Pick colour combinations that will complement the smoothie itself – it’s like interior design in miniature.

Aim for the consistency of soft-serve ice cream so that it’s thick enough to hold up the toppings. 

The advantage of smoothie bowls is that they pack a lot of nutrition into a small space. Bananas are high in potassium, and their density will help the thickness of the smoothie. Yogurt adds calcium and protein, and the oats bring fiber, slow-release carbs and other minerals. Adding spinach leaves is optional and they certainly never appear in apple crumble, but it’s a good way to sneak some healthy greenery past your children!

 

Serves 1

Ingredients

– 1 small frozen banana, cut into chunks
– ½ cup thick plain yogurt
– ⅔ cup apple purée
– ¼ cup rolled oats
– 1 tsp cinnamon
– 1 tsp vanilla extract
– ½ cup milk, or unsweetened plant milk of choice
– A handful of baby spinach leaves (optional)
– Toasted almonds, sliced banana, grated apple, chopped peaches or toppings to taste

 

Method

Put all ingredients in a blender and blitz until smooth. Different milks – and even the age of the bananas – affect the consistency, so be prepared to adjust liquid to suit.
