Smoothie Sundays: Simple watermelon and strawberry

This deliciously sweet watermelon and strawberry smoothie is easy-to-make and naturally low in calories making it a perfect healthy snack between meals

 

When it’s hot outside and you want something quick and light for breakfast, this energizing, naturally sweet, watermelon and strawberry smoothie is an ultra-healthy treat at around just 70 calories per glass.

Watermelons are of course known for being refreshing but they’re also packed with nutrients, including vitamins A, C and B6, antioxidants such as lycopene, amino acids and potassium. Strawberries, too, are rich in antioxidants and are a good source of vitamin C, as well as being deliciously sweet. Even the optional mint leaves are a source of iron and vitamin A. What’s not to love!

 

SERVES 1

Ingredients

– 130g peeled and deseeded watermelon
– 80g strawberries
– Handful of fresh mint leaves – optional but the taste is good
– Squeeze of lemon or lime juice
– Approx 160ml water
– A few ice cubes

 

Method

Place all ingredients in a blender, holding back some of the liquid to adjust for thickness.

Blend, adding liquid if necessary, until desired thickness is reached.
